A crumbly chocolate cookie filled with a chewy coconut and almond center and topped with dark chocolate.

Ingredients: gluten free flour blend [sweet white rice flour, whole grain brown rice flour, potato starch, whole grain sweet white sorghum flour, tapioca flour, xanthan gum], almond meal, cocoa powder, coconut sugar, brown rice syrup, extra virgin coconut oil, shredded coconut, extra virgin olive oil, baking powder, almond extract, salt, semisweet chocolate [chocolate, sugar, cocoa butter, soy lecithin, vanilla extract].

1. What is the inspiration behind this recipe?

This recipe was inspired (very vaguely, obviously) by ma’amoul, a middle eastern semolina cookie usually filled with dates or nuts. I added chocolate because…of course.

2. What is the best compliment you, as a baker, have ever received?

The best compliment is anytime someone says something I made was the “best” version of it they’ve ever had!

3. What do you do for fun?

Bake, mostly! Otherwise walk and hike with my dog, have friends and family over for meals, and play games.

4. Tell us about your community and those you love- kids, pets, friends.

I just got married this past year so my home is with my husband and our dog, Norman. I’m also very lucky to have lots of family right here in the northeast. 

5. If you could hand-deliver a batch of these cookies to any person in the world, who would it be and why?

Anyone who is trying to avoid gluten and/or animal products and is in need of a tasty treat!
